It depends as to how you are going to use them and what a recipe calls for. But since you have a large sheet of dried flax seeds, I would leave them in larger chunks and just grind them as needed. I always keep my seeds in the fridge or freezer to prevent them from going rancid as well.

If using whole it is best to soak them in some water or liquid first so their nutrients are better absorbed. Once the liquid is thick, add to the recipe. The seeds will remain in the whole form. Nowhere do I talk about soaking, rinsing, drying, and grinding daily. You can also grind the seeds which makes them ready to be absorbed into the body.
